Inspired by each of their grandmothers’ love for baking, this cocktail brings all those springtime rhubarb pie flavors together for a sweet and tart burst of flavor! This one is seriously good! Grandma would be proud!

1.5  oz. Vitae Spirits Old Tom Gin

1 oz Strawberry Simple syrup*

.5 oz lemon juice

4 shakes – Fee Brothers Rhubarb Bitters* (key)

Strawberry Simple*

1 cup water

1 cup sugar

1 – 16 oz bag frozen strawberries

1 stick cinnamon

1 vanilla bean

Cut vanilla bean in half and scrape out contents. Combine all ingredients in toa pot and bring to a boil. Strain out any solids after boiling. Store in a ball jar in the fridge for up to 1 month.

1. Combine ingredients in shaker.

2. Shake well and pour into a rocks glass with fresh ice.

3. Garnish with lemon twist or fresh strawberries

 

Pome & Tom

Pome & Tom is a fun take on an Old-Fashioned style cocktail with Gin subbed out for the Whiskey. This style of cocktail really highlights the individual flavors of the spirit being used. Our Old Tom is smooth, balanced, and very aromatic, which lends itself very well for this type of cocktail.

1.5 oz. Vitae Spirits Old Tom Gin

0.5 oz Spiced Pomegranate syrup*

0.25 oz Lemon juice

Orange peel

5-6 dashes Embitterment Orange Bitters

Pomegranate Syrup*

1 cup Turbinado Sugar

1 cup Pomegranate Juice

small squeeze of lemon juice

1 tsp cocoa powder

1 stick cinnamon

4 whole cloves

1 tsp allspice

Combine ingredients into a saucepan and bring to a boil for 5 minutes to reduce. Take off heat and let cool to room temp.

  1. Add syrup, bitters, and orange peel to bottom of shaker tin or collins glass
  2. Muddle ingredients until citrus oils blend with other liquid
  3. Add large ice cube
  4. Add Old Tom
  5. Stir and garnish with rum-soaked cherry

Fall is one of our favorite times of year to highlight our Old Tom Gin. The warm holiday spices present in the gin lend themselves perfectly for pairing with cider. This cocktail is every fall flavor rolled into one, cinnamon, clove, vanilla, oak and so many more. Enjoy!

1.5 oz. Vitae Spirits Old Tom Gin

0.75 oz Caramel Simple*

0.5 oz Lemon juice

1.5 oz Apple Cider

4-5 Dashes Black Walnut Bitters – Fee BrothersAlchemy & a Twist

Caramel Simple Syrup

1 cup Sugar

1/2 cup water

small squeeze of lemon juice

In a sauce pan, add sugar, lemon, and enough water to turn sugar into a wet paste. Turn the burner on low and continue to stir the sugar until it dissolves completely into syrup. Allow the syrup to simmer until golden in color and take off the heat. Add the rest of the water to the mixture and place back on the burner to bring back up to a boil. Take off heat again and let cool to room temp

  1. Add all ingredients into shaker with ice
  2. Shake well and strain into coupe glass
  3. Garnish with lemon wheel or apple slice

Simply put this is an amazing drink, perfect for the summer. The sage and orange give a bright summer finish to an otherwise holiday spiced gin.

.5oz Vitae Spirits Orange Liqueur

1oz Lemon juice

2oz Meyer lemon tea sage syrup*

Meyer Lemon Tea Sage Syrup

2 Meyer Lemon Teabags

2 cup water

1 cup sugar

10 fresh sage leaves

1. Bring 2 cups water to a boil and add teabags to steap for 5 minutes

2. Remove teabags and add sugar and sage leaves

3. Bring up to a boil again, then turn off heat and let steep for 10-20 minutes or until room temp

4. Strain off leaves and store in ball jar for 1-2 months in the fridge

  1. Add all ingredients into shaker with ice
  2. Shake well and strain into coupe glass
  3. Garnish with lemon wheel

Stired

  1. Combine ingredients into mixing container
  2. Stir for 30 seconds
  3. Strain into martini/coupe glass

Gin Whimsy

Simply put this is an amazing classic Saturn Tiki Cocktail. The blend of spices from the Old Tom Gin and the sweet tang from the fruit juices combine with the savory orgeat to create the perfect Spring or Summer refresher. Batch the orgeat and you’ll be able to make this classic cocktail all Spring!

0.5 oz Orange Liqueur

0.75oz Lemon juice

0.75 oz Orgeat*

1oz Passion Fruit Nectar

Orgeat*

2 cups lightly toasted almonds, coarsely chopped
1 1/4 cup sugar
1 1/4 cup water
1 tsp Rose flower water
Bring water and sugar to a boil, turn heat down, add almonds. Let simmer for 5 minutes, turn off heat, let steep for up to 8 hours. Strain almonds out, stir in orange flower water. Bottle and keep in the refrigerator.

Berry Fizzy

This is a “berry” nice riff on a gin fizz. Combining blackberry, cranberry, and rosemary into a shrub for a little zip on the tongue. Slightly sweet, slightly tart, very refreshing.

1 oz Berry Shrub*

0.5 oz Lemon juice

0.5 oz egg white

Top with soda water

Balsamic vinegar

Berry Shrub

1 pint blackberries

6 oz fresh cranberries

2 oz dried rosemary

2 cups sugar

2 cups red wine vinegar

  1. Combine blackberries, cranberries, and rosemary into a container and muddle into a paste.
  2. Add sugar and stir into mixture until sugar is saturated with fruit juice
  3. Place in fridge and let settle for one day.
  4. Add vinegar and stir into mixture.
  5. Place back in fridge for 1-2 days
  6. Strain out all solids and store in Ball Jar

1. Combine all but soda water in shaker with ice

2. Shake well and pour into a Collins glass.

3. Add soda to top off glass

4. Add a few drops of Balsamic to the foam on top of the cocktail

Tom's Gimlet

Ellie has done it again!  Our two-time cocktail competition champ has come up with another delicious libation for our tasting room! This cocktail tastes exactly like a light, strawberry milkshake. Sakura are edible cherry blossoms, pickled and dried in salt and are used in Japan for tea during celebrations such as weddings. The Sakura add a light floral note to this cocktail that is perfect for springtime!

1 oz. Lavender Orange peel simple Syrup*

1 oz. Fresh lime juice

Garnish with lime wheel

Lavender Orange peel Simple Syrup

1 cup Sugar
2 cup Water
2 teaspoons dried lavender buds
 2 teaspoons dried orange peel 

Place water, lavender, and orange peel into a small saucepan. Heat and stir until water turns a tea-like color. Add sugar and stir until dissolved. Take off heat and let cool to room temp. Strain out solids and store in a ball jar for up to 1 month

Ellie has done it again!  Our two-time cocktail competition champ has come up with another delicious libation for our tasting room! This cocktail tastes exactly like a light, strawberry milkshake. 1.5  oz. Vitae Spirits Old Tom Gin

1 oz. Strawberry-Sakura Simple Syrup*

1 oz. Pasteurized Egg Whites

1 oz. Half and Half

Strawberry/Sakura Simple Syrup

1 cup Sugar
1 cup Water
1 cup Sliced Strawberries
8 Salt-Pickled Sakura Blossoms

Place water and sugar in small saucepan. Heat and stir until sugar dissolves. Add sliced strawberries and simmer for 20 minutes. While strawberries are simmering, gently place 8 sakura blossoms in a bowl of cold water to dislodge the salt. Leave until syrup timer is complete. Take syrup off of heat, gently add the blossoms (removed from the rinsing water), cover and steep for ½ hour. Strain entire mixture through a fine mesh strainer. Do not press on strawberries; this will keep the syrup from become cloudy.

No Yolkin' Around

This is a fun holiday riff on an eggnog, but much lighter. Our Old Tom Gin pairs perfectly with a unique liqueur called Advocaat, a traditional Dutch alcoholic beverage made from eggs, sugar, and brandy. This winter cocktail is sure to please the crowd during the holiday!

0.5 oz Egg White

1 oz heavy cream

3 dashes Embitterment Orange bitters

Tom and Peary

With notes of cinnamon and clove, as well as subtle hints of ginger and cardamom our Old Tom Gin is a wonderful spirit for fall cocktails. The Tom and Peary is a fun fall spiced cocktail that is sure to liven up any festive cocktail party!

1 oz Spiced Pear Nectar*

0.5 oz  lemon

0.5 egg whites

Spiced Pear Nectar

1 cup pear nectar

2 tsp anise seed

2 whole cardamom pods

1 cinnamon stick

6 Allspice whole

Combine ingredients into sauce pan and bring to a boil for 5 -10 minutes. Take off heat and let steep for 4 hours. Strain off solids and store in mason jar.

3. Garnish with  powdered cinnamon

This cocktail certainly fits it name. Full of juice and incredibly tasty, the Succulent is sure to be a hit on a hot day. Similar to a gin fizz, this cocktail goes down easy, almost too easy.

Bee's Knees

Difficulty Level: Easy+

This cocktail is a perfect way to get in the mood for summer. Light, full of flavor, and extremely refreshing! The ginger and honey is a perfect pairing with the heightened cinnamon notes in the barrel aged gin, and the lemon mellows out the spices and ads a refreshing zip to the finish. You’ll want more than one of these!

1 oz  lemon

0.5 oz ginger and honey Simple syrup

Ginger Honey Simple Syrup

2 cups water

1 cup honey

2 inch piece of ginger sliced thin

Combine water and honey into a sauce pan and bring to a slight simmer. Add sliced ginger and let simmer for 20 minutes. Pull from heat and let cool to room temperature. Strain out solids, and store in ball jar.

This classic cocktail, when shaken correctly, is like drinking a cloud. Incredibly light and airy. full of subtle gin and citrus notes.

1 1/2  oz. Vitae Spirits Old Tom Gin

juice of 1/2 lemon

0.5 oz Lavender Simple syrup

0.5 oz egg white

Top with 5 drops Embitterment Lavender Bitter

2 cups water

1 Cup Sugar

4 oz by volume – dried lavender buds

Combine water and Lavender buds into a sauce pan and bring to a slight simmer for 5 minutes. Strain out the loose buds and add sugar. Place back on stove and bring up to a boil. Immediately pull from heat and let cool to room temperature.
